Support Local Lamb Farmers at Todd Hill

Purchasing meat from local farmers helps support the local economy and supports farmers who care about raising healthy animals and taking care of the land. We are happy to carry meat from Wil-Hi Farm in Tivoli, NY. The farm raises goats, sheep, and lamb and is part of the Dutchess County Sheep & Wool Growers Association.

Wil-Hi Farm has been a long-time vendor at Taste NY Todd Hill. Chuck and Heidi Simmons are active members in the rich agricultural community in Dutchess County. Their flock is tended year-round and Wil-Hi supplies Taste NY Todd Hill market with delicious lamb products. We recently brought in several sausage varieties, including Merguez, the most tantalizing of all. Merguez sausage is North African in origin; it is heavily spiced with cumin and chili pepper or harissa, which gives it its characteristic piquancy and red color, as well as other spices such as sumac, fennel, and garlic. Merguez is usually eaten grilled but can also be broiled or seared and then simmered with other savory and sweet ingredients, including apples and onions. Served with saffron rice and other roasted root vegetables, it is the perfect winter meal that will transport you on a flavorful journey.
