Winchell Coffee, Pine Plains, NY
Winchell Mountain Coffee Roasters has been practicing the same roasting methods that have been passed down through the family since 1973. Coffee beans come from around the world and are always ethically sourced. Winchell has longstanding relationships with many of the farms that the beans are sourced from and has been buying from the same communities for years. Some of these farms are Fair Trade certified, and some are not - this is in part because many small farms and communities simply cannot afford fair trade certification.

What is honey processed coffee? From the website:
"Honey process is a coffee processing method in which coffee cherries are picked and sorted, have their skins and pulps removed like other types of coffee, but are then dried without washing off the sticky-sweet outer layer of the fruit. Since honey process beans spend less time in water than washed beans do, less fermentation occurs, so not as much of the sugar in the bean is converted to acid. The honey process is known for being very eco-friendly, as it uses less water than other coffee processing methods! It is also known for helping to create a beautifully balanced and sweet coffee bean."

All the animals are grazed on a rotational schedule that helps regenerate our corner of the earth. The poultry aerates the topsoil; the ruminants fertilize. Liberty Farms is proud of its low-waste practices, from feeding "ugly" veggies and eggs to the pigs, to producing its own organic mulch and compost that fertilizes the hay fields and gardens.
By using the natural cycles of nature, plant life, and animals, Liberty Farms not only feeds communities with healthy, organic food, they also help reverse climate change and rebuild healthy soil.
